Wash the zucchini, wipe dry, cut into 2/3-inch thick slices. Steam over salted water for about 10 minutes. Cut the smoked bacon into small strips. Brown slowly in a frying pan with 1 tablespoon oil. Combine the cream, egg yolk, salt and pepper in a bowl. Pour the zucchini slices and the stips in a hot salad dish, top with the egg and cream mixture, stir well and serve sprinkled with grated GruyÅre.
